Mmm Mmm Good!



I took my youngest daughter to lunch yesterday at a little place close to work. It has very few tables, but the food is wonderful! I tried out one of their specials they had listed for the day and discovered a new taste delight!


It is a salad that is a combination of two of my favorite salads. Now, I have to admit that I love to savor the flavor of yummy food probably a bit too much, but this salad is worth the calories AND could be adjusted to make it lower in calories. Personally, if I am going to go through the trouble of making a special salad, I am not going to worry about the calories. I can always skip the meat at the next meal!

A friend of mine at work said that she thought she had seen this salad done on the food channel. She thought it sounded like it would be a good recipe to try. So for those of you who like to try out recipes, here are the basics...



Start with a basic coleslaw recipe. Add finely chopped apples and raisins. That's it! I am telling you that it was out of this world! I think that when I make it I will try adding walnuts like you have in a Waldorf salad. I haven't decided about the celery. I think the crunchiness of the cabbage is enough.

As I was savoring the flavor of this salad I was thinking of what else I could possibly add to coleslaw that would be tasty. Strawberries? Maybe not blueberries. Nectarines? Pineapple? I think I may have to spend some time trying out some of these ideas.

So how about some of you? Any ideas for some great ( and easy) summer salads?

Mine will come home in a box, from Pauley's. I am fasting for my a cardiologist appointment/checkup later today. Mrs. Jim wants me to bring home some of their pasta salad.
You can add shredded carrots to the cold slaw, they add color. Just a tad of sugar changes the taste complextion a lot. Also do that for restaurant cold slaw that is disappointing your tastes.

My MIL makes that salad. It is very good.
Once in a while my bride and I will stop at a Chili's Restaurant to have the crispy oriental salad. It is to die for.
My favorite is my waldorf salad and second is my wifes spinach salad with hardboiled eggs, bacon, and sweet dressing.
Next would be the ol Krab salad recipe that comes on every package of mock krab. Pineapple, krab, and browned slivered almonds are in that recipe.

It is against my religious beliefs to ever eat anything with raisins in it as they look a lot like shrivelled flies. My kind of salad is fresh baby spinach, cucumbers, mushrooms, black olives, and a nice light dressing.

Mark-- I think that the raisins could be left out if walnuts are added. It is the apples that hooked me. Spinach salad is one of my very favorites as well, although I have never had it as you describe.

Cliff-- I also make a spinach salad with hard boiled eggs, bacon, fresh mushrooms and a sweetinsh dressing that uses sour cream as a base. Sounds similar! A good waldorf is a favorite if it doesn't have too much mayonaise. The dressing I use for my Waldorf seems lighter because the mayonnaise is diluted with cream! I'll have to post that dressing recipe and the one fo rhte spinach salad one of these days.

I make a great salad using only lettuce and chocolate bars broken into bite sized pieces. The lettuce makes a nice garnish. Just don't eat it..

I fashion salads from roasted chicken, prok and beef with croutons and bacon on it for garnish. If there's complaint about it not being green enough you simply leave it out in the sun for a few days.

My idea of a good salad is a huge bowl full of raw goodies such as avocado, capsicums, cucumber, lettuce, sundried tomatoes, olives etc. and then for the dressing saute some garlic in olive oil and add tamari toasted seeds (sesame, pumpkin, sunflower). Drizzle this on top of the salad, it is simply devine.
